Allister and Alice bring a fresh perspective to the Kent dining scene, borne of both their illustrious careers in food and hospitality.

From Allister’s native Whitstable, to five star European hotels and the west country’s leading Michelin starred restaurants, the couple have won plaudits and awards due to their commitment to the quality of the food on the plate, and the seamless experience of modern fine dining.

Allister’s fresh take on classic British and European food is informed by a love of fresh seasonal produce, his roots on the Kent coast, and in-depth experience as an award-winning chef.

Alice has made waves of her own both as a sommelier and manager, and together they have created Hide and Fox to deliver truly exceptional dining: driven by flavour, enhanced by great wines, and offered always with the beautiful customer experience they both demand.

THE TEAM

  • Francesca

    Restaurant Manager – Francesca is originally from Bergamo, Italy. She attended the San Pellegrino Catering school before beginning her career in hospitality in 2012 at various venues in Italy. She moved to Kent in 2015 to work at Rocksalt Restaurant in Folkestone before joining Wife of Bath restaurant with rooms in the village of Wye. Francesca joined Hide and Fox in August 2021 as assistant manager. She loves food, especially desserts, but one of her main passions is wine. She holds the WSET level 3 certification, delivering knowledgable wine recommendations to our guests. Always with a smile, her calm demeanour, professionalism and exceptional customer service has made her an integral part of the team!

  • Bianka

    Assistant Manager – Bianka moved to Kent from Hungary in 2009 and worked in very hospitality venues, including a luxury cruise line. She has been part of the management team at Rocksalt for 8 years, before joining us in April 2023. Bianka holds WSET L3 in wines. She is very passionate about wine and food and enjoys cooking for family and friends. With her green finger, she loves pampering her garden. Bianka has a calm and friendly nature that makes her a wonderful part of the guests’ experience and the team alike.

  • Annabelle

    Starting from a young age, Belle has worked both in the kitchen and in the restaurant, from pub chef to barista. Since joining the team in 2025, Belle has shown a passion for the hospitality industry that is second to none. Always eager to learn and improve, she successfully completed WSET L2 in wines and specialised in our coffee service at the restaurant, where she will recommend you the perfect cup! She enjoys spending time with her family and partner at the beach and looking after her two Maine Coon cats, Bunny and Diego. She is a warm and thoughtful person and she will win you over in an instant with her genuine smile.

  • Josh

    Head Chef – Originally from Kent, Josh has been with us since September 2023. After a year in Australia, he took the opportunity to train at Fordwich Arms and in 2020 was promoted to head chef at the newly opened sister pub Bridge Arms, awarded a Michelin Star during his time there. Josh is passionate about the culinary arts, always striving to learn new skills to apply within the kitchen and he is an excellent baker. When not with us, he spends time with his young family and enjoys music and running. Allister is thrilled to work with Josh’s creativity and positive energy. You might have seen him on TV on Great British Menu winning the London and South East heat.

  • Cameron

    Pastry chef – Cam comes from an IT Degree, but has always been passionate about cooking. After a few years in local restaurants, he joined Hide and Fox in 2025, as our first pastry chef. Cam loves working on his herb and strawberry garden, running marathons and bird watching. He has a big love for baking that doesn’t stop at work but carries home during his days off. Cam is a lovely and kind person and a great asset to the team
